Elaboration process:

During the process of preparation of the canned Andalusian mackerel we take special care with the raw materials we use, making the relevant controls to ensure consumers a quality product.

The "Fillets of Andalusian Mackerel in olive oil" have to be elaborated following the same artisan procedures:

  • Fish reception.
  • Peeling, eviscerated and washed.
  • Cooking in salt water solution.
  • Maintenance and cooling.
  • Peeling by hand.
  • Stowed by hand.
  • We add the olive oil.
  • Closure of the can.
  • Autoclave treatment.
  • Tin washing.
  • Storage and shipment.


The mackerel fillets obtained from these species are grayish-white in color, compact in texture, with a blue fish aroma and flavor. Product protected by the IGP Andalusian Mackerel.
