In the elaboration of the 'Boquerones de la costa in olive oil' a series of steps must be followed. First of all, the raw materials are received (always fresh), which arrive at the facilities directly from the port.
Upon receipt, the fish is headed, gutted and its tail cut off. All parts are hand cleaned by staff in a brine bath and packed to size. This is followed by turning and cooking of the fish pieces in the direct steam cooking tunnel.
One of the key steps to achieve our exclusive flavor is addiction with the best olive oils from Andalusia. Subsequently, the cans are hermetically sealed, as well as sterilized in autoclaves to achieve a totally sterile product.
At this point, the cans are washed and dried before proceeding with their cartoning and boxing. The process concludes with the storage of the product for later dispatch.
